So I had killer allergies yesterday. Wasn't too bad for most of the day, but lastnight I was trying to rest and dozed off and woke myself up sneezing! Anyhoo.. so I took an allergy pill. UGH! I HATE taking those b/c they knock me out.. however being bed time I figured it was no big deal.
Of course I could NOT wake up this morning! However, while I was waiting for the bus this morning, I cooked steaks, a ham, turkey burgers, and cut up a bunch of veggies for snacking! I felt so productive! I worked tonight and tomorrow so I thought I'd get stuff ready for me and Ry to eat.
Anyhoo.. I tried this burger recipe out of my SHAPE magazine. Really tasty! I hope you enjoy it if you try it!
ASIAN CHICKEN BURGERS with WASABI KETCHUP
(serves 4, approx prep/cooking time 22 min)
1 pound ground chicken or turkey breast
1/4 cup chopped fresh cilantro (I didn't have any so I just used chives)
2 cloves fresh garlic minced
1 tsp reduced sodium soy sauce (for my high blood pressure *hehehe*)
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
4 tbsp ketchup
1 tsp wasabi paste
4 whole wheat rolls
*I HATE wasabi so I just used Franks Red Hot and Cayenne Pepper
1. In large bowl, combine first 7 ingredients well. Shape miture into 4 patties, each about 1 inch thick.
2. Coat a large grill pan or griddle with cooking spray and set pan over a med. heat *all I did was take my reg. oil and spread it over the pan with a paper towel before heating
3. When pan is hot, add burgers and cook 5-6 min. per side until cooked through. *B/c mine took a bit longer I just lowered the heat and flipped for about 10 min. extra. Next time I would try and make them a bit thinner to cut time. They were still really good, but much smaller than the bun. Nice thing is that you know what size they will be b/c they don't shrink down b/c the meat is so lean!
4. Meanwhile, mix ketchup and wasabi paste well in small bowl, place burgers on bun and top with ketcup mixture.
NUTRITIONAL INFORMATION:
(1 burger and 1 tbsp wasabi ketchup)
261 calories, 31% fat (9g; 2.3g saturated), 41% carbs (27 gr), 28% protein (18g), 4 gr fiber, 57 mg calcium, 1.4 mg iron, 792 mg sodium.
I was a bit skeptical b/c of the lack of topping but the patties are so packed with flavour you don't need extras. In the mag. they added sliced red onion on top.. meh!
They also had this cool creamy relish recipe for beef burgers
CREAMY RELISH
Combine 1/4 c. plain non fat yogurt with 1/4 c. pickle relish.
(per tbsp, 18 cal. 0 fat)
There are a couple of other neat recipes but we'll see how they work out. I just love burgers and I love that these ones are tasty, filling, and not that bad for you, yet satisfy that want :)
