My arm feels better.. still not 100% >:( Grrr!!!

So I had killer allergies yesterday. Wasn't too bad for most of the day, but lastnight I was trying to rest and dozed off and woke myself up sneezing! Anyhoo.. so I took an allergy pill. UGH! I HATE taking those b/c they knock me out.. however being bed time I figured it was no big deal.
Of course I could NOT wake up this morning! However, while I was waiting for the bus this morning, I cooked steaks, a ham, turkey burgers, and cut up a bunch of veggies for snacking! I felt so productive! I worked tonight and tomorrow so I thought I'd get stuff ready for me and Ry to eat.
Anyhoo.. I tried this burger recipe out of my SHAPE magazine. Really tasty! I hope you enjoy it if you try it!

ASIAN CHICKEN BURGERS with WASABI KETCHUP
(serves 4, approx prep/cooking time 22 min)

1 pound ground chicken or turkey breast
1/4 cup chopped fresh cilantro (I didn't have any so I just used chives)
2 cloves fresh garlic minced
1 tsp reduced sodium soy sauce (for my high blood pressure *hehehe*)
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper

4 tbsp ketchup
1 tsp wasabi paste
4 whole wheat rolls
*I HATE wasabi so I just used Franks Red Hot and Cayenne Pepper

1. In large bowl, combine first 7 ingredients well. Shape miture into 4 patties, each about 1 inch thick.
2. Coat a large grill pan or griddle with cooking spray and set pan over a med. heat *all I did was take my reg. oil and spread it over the pan with a paper towel before heating
3. When pan is hot, add burgers and cook 5-6 min. per side until cooked through. *B/c mine took a bit longer I just lowered the heat and flipped for about 10 min. extra. Next time I would try and make them a bit thinner to cut time. They were still really good, but much smaller than the bun. Nice thing is that you know what size they will be b/c they don't shrink down b/c the meat is so lean!
4. Meanwhile, mix ketchup and wasabi paste well in small bowl, place burgers on bun and top with ketcup mixture.
NUTRITIONAL INFORMATION:
(1 burger and 1 tbsp wasabi ketchup)
261 calories, 31% fat (9g; 2.3g saturated), 41% carbs (27 gr), 28% protein (18g), 4 gr fiber, 57 mg calcium, 1.4 mg iron, 792 mg sodium.



I was a bit skeptical b/c of the lack of topping but the patties are so packed with flavour you don't need extras. In the mag. they added sliced red onion on top.. meh!

They also had this cool creamy relish recipe for beef burgers

CREAMY RELISH
Combine 1/4 c. plain non fat yogurt with 1/4 c. pickle relish.
(per tbsp, 18 cal. 0 fat)

There are a couple of other neat recipes but we'll see how they work out. I just love burgers and I love that these ones are tasty, filling, and not that bad for you, yet satisfy that want :)

OMG! My arm Weeeally Hurts!

OMG! I can't believe it! I won! I WON!!! I WON A FREE COFFEE!!! Roll up the rim is my HERO! *swoons* I'm so happy! LMAO!

I had my medical today.. and since you get them in Gr. 9 (and that's more than 10 years ago..) I had to have a tetnus shot >:(
So I had to go to Vancouver for the joyous occassion and on the way down Inder and I got rear ended at a light! No biggie b/c she really just hit our wheel compartment and it's just scratched. Ry's a mofo though and even though I told him.. am I covered by insurance? if not add me.. asshole never added me! pfft.. we'll see what happens. And when I called him to tell him he says, "You must have stopped too suddenly!" HAH! Ya, NO! I was stopped for at least 30 seconds before dumb ass hit me!

Anyhoo.. so my blood pressure was a bit elevated! lol! Then they were going to retest me and it just went up as I waited to get retested! lol.. stupid bp!

After I finished the sight and hearing tests (and shot) with the nurse, the doc comes in.. she's this little tiny asian lady.. so no nonsense.. gave me crap for not having a family doc! lol.. anyhoo.. my stupid thyroid is inflamed! so I tell her I had hypothyroidism but haven't been tested in ages.. LOL! So who knows what'll happen. I think it'll be fine, but I have to get re-tested, she wants me to have an ultrasound, but she's waiting til she gets the blood work to decide. Anyhoo.. it'd be nice to not be tired all the time! lol..

So that's what happened. It actually wasn't too far from Robson, so we went there, got a new shirt, navy still pants, and NO JET JACKET! She said they didn't have many left and sent them off to the outlet store. They probably don't have any left... so whatever.. no jet jacket for me.. I'll survive I'm sure. Then I got this cute scoop neck 3/4 sleeve turquoise top at Dynamite... I'm stoked b/c it looks hot :)

Now I'm getting ready for my big trip to Kamloops! OoOOH!!! Jen and I are going to try and grab coffee, then we're going to do b-day lunch with her mommy! YAY! It's going to be like wedding prep all over again! It was so much fun bumming around with them.. nails, costco, grocery people, the ranch.. too bad Erin won't be there :S I have to say that time before the wedding was really great. Yeah I had to take a week off school and miss a bunch of classes, but I made up for it, and I got to spend time helping out my friend during a really stressful/exciting/fun period of her life. I wouldn't trade that time for anything because I know she really needed me and I am just glad that I could be there for her as much as I could. It was difficult not being able to help her out during the earlier wedding prep.. so I was just happy I could be there then. Plus I got to spend time with her gramma and mom who I love dearly as I've known them FOREVER!!! (and they're amazing ladies)! Plus, how much help are guys really? LOL! They just want to make the women happy and go along with what they think will accomplish that! *hehe sorry Brent :P*

So ya.. it'll be great to see the ladies in K-town and I'm just happy we'll be there at the same time! YIPPEEE!!

Plus I get to see my family who I haven't seen in AGES!! Since the wedding.. and I didn't see them a whole lot since I was helping out Jen.. but they knew that was the deal so whatever. And I get to see my Kari-bear! I miss her tons.. and I only wish I had been able to be there for her this last while during such and incredibly difficult period in her life. :( But I'll be there soon baby! And we can do Denny's!!! WHOOOOOOOOOT!!!
Then Kathie and I are going to try and grab lunch.. jeez I haven't seen her since I moved and I want to see her rock! :P
Then there is that DeVries Family! EEEP! *squishes them* I love those guys and can't WAIT to see them! Hunter has gotten so big since I saw him last!

It's going to be a super busy trip... but if there is anyone out there who would like to grab a coffee or something let me know!

So things are good.. been working a ton. Pretty tired, which I wouldn't really be.. if I wasn't so fed up with my silly job! What's exciting though is that this time next week I'll be on my way to Kamloops!!! YAY! I get to spend some time with my family, friends, and Jen D. is coming to town then too!!! So I get to see her some too!! WEEEEEEEEEEEEEEE!!!
Was going to go to yoga lastnight.. but I got called out to a sexual assault and didn't get home til around 9! eep!

And just so you know.. my new fave snack is frozen cantelope! I love frozen grapes, but the other day I bought a cantelope and it was good, but a bit over ripe. So then I thought.. hmmm.. I'll pop it in the freezer.

Going to Pavarotti!!!

Okay.. the other night Ry and I were chilling after getting home from work, watching the news.. and this ad comes on. Pavarotti is doing a farewell tour.. and he's coming to Vancouver. I thought that was cool, but didn't say anything. Then Ry pipes up... "OOH! I wouldn't mind going to see that.. you want to go? Look online and see how much tickets are!"
OMG! So after I revived from having my bf suggest we go to see an opera singer.. albeit a major one, I checked.. tix went on sale today.. and we're going! We only got cheap seats because the good ones were $350/person! EEP! So we got cheap ones b/c they're still decent and it's Pavarotti.. no matter where you sit it will be amazing!

Truth

The truth is a funny thing...

People are constantly searching for it.
We all long for truth in our relationships and aspire to live by the truth.

But what is the truth?
Is it what you believe to be true? What if what you believe contradicts what 5 other people say is the truth? Who do you believe? Yourself? Or do you acknowledge what the others are saying and question whether your memory is skewed?

I believe that the truth is something we may never know. Whatever happens, details will fade, our past experiences will obscure how we view what is going on and perhaps make it impossible for us to really see the truth of what is happening right before us.

For me, the only things I know are true are my feelings. Not just every day feelings.. but the ones that I sit there and question and test their validity.. because if there is one person I know can't ever lie to me.. it's myself! I know how I feel about people and events... my feelings are true.

I feel that the only way to know truth is to be open to the possibility that you might not know it.. to take into consideration what others are saying and test your feelings and memories.. because truth will stand the test.. if it is in fact the truth.

Our puggy is always itchy... she's seen 3 different vets over the past few months.. and they found no signs of anything and diagnosed her as having allergies. She takes her itchy pills and she's good.. except for the last few weeks poor pug wakes up and is itchy all over... rubbing her nose in us! So I went to brush her tonight.. UGH! OUR PUG HAS FLEAS!!!
*sigh*
So now I have to take her to the vet tomorrow, and get meds, shampoo, whatever, for her and kitty! Then I have to decontaminate our house!! *grumbles*
Oh well.. the joys of being a pet owner!

So, I think one of the most ironic things that has happened in the last while is that Ry and I noticed the gardeners mowed our lawn for the first time this year! Then.. it snowed! LOL! I love how when people think that winter is over.. Mother Nature says.. NOPE! I'll show you what's what! :)
Anyhoo.. at least the snow didn't last and wasn't more than just a nuisance... I love snow, but there is a time and a place.
So this week was alright.. nothing too out of the ordinary. Thursday morning I woke up, after a good 8 hours or so of sleep, and felt soooooooooo sleepy. I thought maybe it was because I was having one of those mornings when I kept dreaming in between the snooze button. However, as the day wore on my fatigue just kept getting worse. I thought it was rather strange.. not even caffeine could get me out of my fog. Then I thought it was just because my iron is at a low point and wrote it off. Then Friday after work I was waiting for Ry and found it difficult to swallow, sneezing, runny nose.. AAAAAAAAAAAAAAAAAAAHHHHHHHH!
So for the last two days I've been plagued by a cold. Albeit not a massive full blown cold.. but one of those annoying colds that keeps you nice and tired, makes it tough to swallow, and just plugs your nose enough to hurt and to keep you breathing out of your mouth which irritates your throat. Sometimes I'm not sure what's worse. I think, depending on how long this half assed cold hangs on, it is almost better to have a day or two where you're so sick all you do is sleep and drink fluids and rest. So today I treated myself like that.. I laid in bed with Ry, drank juice, popped my vitamins, watched some Gone with the Wind.. then went and stood out in the rain directing parking at a church function as a citizen's patrol rep. LOL! Go figure..
Oh well.. what can I say.. I'm a geek!
The Olympics closing ceremony was awesome! But holy! Ricky Martin?!?? OMG! LOL! Liz remember our night of frisbee at my place on Jasper? We danced and sang to Ricky *hangs head in shame* LMAO! Wow.. that seems like years ago. My life has changed so much.. I still like having a good time.. but I can't believe how things change in a matter of a few years.. Liz is a mommy and a wife.. I'm living in a different city pursuing a career in law enforcement, hardly ever drink ever, live with the most amazing man.... so different yet the same. Growed up I suppose :)
My dad, step mom and step sis were here this weekend. We did a bit of shopping, I got a gorgeous black dressy trench coat from work with my b-day money (saving the rest for lulu!!!), and we went to Brokeback Mountain. Hmmm.. I can't say I loved it and rave about it. It was okay, long, makes you think, great acting for sure! I'd say see it because it is so thought provoking.. but I dunno.. I've definately seen much better movies... but it was good. Plus Heath and Jake are hot no matter what or who they are doing! *heheh*
Anyhoo.. that's about it.. lol.. boring I know.. but if you want to know more boring stuff.. email me or call me.. OMG! IT IS ALMOST MY BIRTHDAY!!!!
and I have no plans.. for the first time in years! lol.. wow.. I really don't care I suppose!

Happy Day After Valentine's Day!

So yesterday was nice.. kept busy during the day b/c Ry was at work.. made him a card with pug pics and construction paper :) When he came home he gave me a beautiful bunch of tulips and some chocolates. Then we relaxed for a bit and headed out for dinner.. to the Boathouse in White Rock! It was great :) They had a special menu and I had wild greens salad, lobster/crab cake, Steak topped with Lobster thermidor stuff, and key lime pie (to go :P) It was amazing! Ry had this shrimp that was amazing.. it was spicy pan fried or something.. I dunno but it was flippin hot and tastey! Ry also ordered a bottle of Red wine.. which I drank most of (b/c he was driving) so when we got home I was a bit tippy! lol.. it was funny.. geez I NEVER drink anymore and now it's been twice in less than a week! lol.. maybe I need to take a break now :)
Anyhoo.. I hope everyone enjoyed their day/night.. whether they were with loved one, friends, or just chilling by themselves!

So Girls weekend was great! It was so great to see Erin, Mel, Jen, plus all the others like Jehn and Naomi... good times!
I just have to say.. HOLY COFFEE WHORES R'US! lol.. Mel does me one better I say! Her and I can't ever live in the same province.. we dress the same.. drink and eat the same things.. UGH! lol..
Holy Lulu.. I love my new gear.. comfy.. I need more still pants to be still in.. ;)
Can't wait to get my pics uploaded and posted so I can share them.. the Aquariam videos are great! I <3 Sea Otters!
Mel had sushi, we shopped, drank.. good times!
Actually the only thing that sucks.. is it had to end :) CAn't wait til the next one in Canmore.. the 4 of us rule the St. Ann's (OLPH) School ;)

WHOOPPIEEE freakin WHOO!! lol.. can't say it's ever been my favorite day.. but whatever.. shit happens :P Not sure what the plans are for tonight.. apparently we're not going for dinner til 8:45.. ugh! lol.. how hungry will I be? Anyhoo.. not sure what is planned.. but it will be nice that Ry and I are together and that's about all that matters to me.
As for everything else.. I'm not feeling like posting a big long post.. so that's it for now :)

OMG! Today our regional manager is coming to our store.. so everyone is running on empty.. well lastnight.. me and one other girl were working and I was given this impossible list of tasks.. didn't think I could do it.. BUT I DID!!!! OMG! I was waxing, helping customers, cleaning the WHOLE STORE, every piece of clothing.. It looks AMAZING! Plus we went over our sales.. plus my manager came in and said the store looked fantastic! Bruce will LOVE it!
